ANGEL FOOD HEAVEN
To make a 13x9 casserole dish you will need the following: 2 sugar free angel food cakes 2 cans pineapple tidbits, well drained 2 4 serving size boxes sugar free vanilla or banana pudding, prepared as for a pie filling. 1 large or 2 small tubs cool whip, light or sugar free as desired. Additional ingredients that can be added as desired: 2 jars drained maraschino cherries, 3 cups coconut, 3 sliced bananas, 1 pint sliced strawberries.
Begin by crumbling the cake into small chunks in the casserole dish. Second, add all fresh fruit, coconut, cherries, etc. reserving a small amount for garnish. Third, fold in the prepared pudding a portion at a time. You will want all of the cake to be moist, but you wont want the whole thing to be runny. The key here is to have everything really well drained. Last, add a layer of cool whip to the top and garnish with reserved fruit. Keep refrigerated until ready to serve. Note: This recipe can also be made with strawberry sugar free angel food cake when walmart has it. It is also good with whatever seasonal fruit is around and does not have to be made sugar free.
